- (ar lean ón leathanach roimhe)cool the butter. When the water came out quite clear, the butter was salted, with so many pounds of salt to pounds of butter. Saffron was mixed through the salt to colour the butter, this was drawn like tea and mixed with the salt.
The salt was got from rock salt. This was made by the old people in a special salt pan, and was used for curing bacon and butter.
A skimmer made of wood and shaped like a saucer was used for mixing the salt through the butter.
Churns were used for making the butter during the winter months. When milk was scarce, this was worked with a beater and staff. The top of the churn was covered with a wooden cover, with a round hole through which the staff came through. The beater was worked up and down.
