- (continued from previous page)Epicures (another early variety). Starch was made from potatoes in the old days. The potato was grated and strained, the water and starch being separated from the flesh of the potato. Then when it shired the starch stayed at the bottom of the vessel with which it was strained. Then it was put out in the sun to bleach and became very white. It was then used for laundry purposes.
