- Long ago, in Ireland, there was no starch to be bought in the shops as there is now. Still, the people in those days had to use starch as well as now. They had to make the starch themselves.This is how the starch was made. The people chose the biggest potatoes, and then these potatoes were scrubbed and washed clean. When washed they were grated into a tub. Then the pulp was squeezed through a thin piece of linen into another tub. This water was left in the tub until the starch settled at the bottom. Then the water was thrown out and more water was put in its place. This was done many times until at last the water came out quite clear.
