- Long ago bread was made from wheat and oats, but the flour was not made in the district. The people used querns before mills became common. The different kinds of bread used long ago were oaten, wheaten, potato, and boxty bread, and pancakes. Milk was used for kneading.Bread was baked every day. Oaten bread was baked in front of the fire standing against a grid-iron which was made of iron.Griddle bread was baked like oaten bread only it was baked on the fire.Pancakes were made on Shrove Tuesday and boxty on Hallow Eve.
