My mother told me the way boxty used to be made in her young days.
She said someone would go to the potatoes heap and select some big potatoes and bring them to the house and wash them clean. The woman of the house would then peel them and grate them into a basin she said.She would then get a cloth and put the grated potatoes into it ans squeeze the water out of them. She would then get some flour and salt and mix it with the grated potatoes in the basin. It is then ready for to bake.Michael Mullark
