My granny Mrs Jane Cox of New Ruskey aged 71 years told me how she used to make boxty in her young days.
First of all she said she got some big potatoes and washed them very clean. She then got the grater and grated them. When she them grated, she got a boxty bag and put all the grated boxty into it, she then squeezed it into another vessel.
When the boxty was dry enough she put it out on a bread board on the table and then mixed some flour, soda, and salt through it. When she had it mixed she cut it into farrells and put them down on the pan to bake.
When it was baked she took it up and ate it with butter on it.
She also told me how she used to make potatoe cake in her young days.
First of all she used to get some big potatoes and peeled them. Then she used to put them in the bread board, then she used to(continues on next page)- Collector
