- Potato-Cake
was made very often by the old people and was a great favourite with them. The old people of the present day think a potato-cake is a great luxury.
The potatoes were first washed well and were then left to boil until they were very soft. They were then strained and left to dry.
When dry they were bruised with a knife and placed in a bowl. A little flour was then mixed with them and also a little salt and soda. These were mixed with milk and baked in a bastible.(continues on next page)- Collector
