    this being particularly necessary in cold weather. When little lumps of butter appeared on the glass the work was almost at an end, and the churn was rocked from side to side in order to gather the butter. The buttermilk was then drained off through a spicked or hole in the churn. Spring water was next poured on the butter to wash out the buttermilk. It was then salted and lifted out of the churn by means of wooden bats, and then made into rolls.
