  1. A great many people in this district do a lot of churning especially in the Summer months when milk is very plentiful. When they milk the cows they strain the milk into a basin and leave it to set, then they skim it and put it into a clean vessel till it is ready to churn.
    When the people are ready to churn they scald the churn first and then they cool it with cold water. Then they throw the cream into it and then they have to bring the cream to a certain temperature before they churn it. When it is churned they take the butter out of the buttermilk
