  1. When people have the full of a bucket of cream gathered to make a churning they take out the churn and scald it with boiling water.
    Then they empty out the water and put cold water into it and in a few minutes the woman empties out the cold water and puts in the cream. Then she keeps on turning the handle of the churn until the butter is formed. The churning raises the temperature of the cream and if it is allowed to get too high the butter will be soft. It is therefore necessary to cool it with small quantities of spring water.
