    the lid we put a little Blessed Salt in the cream. (Blessed Salt is salt we receive from the Friars every year.) It is the men who churn usually.
    In Summer we add cold Spring water to the cream while churning because the butter easily gets burned (scalded) in hot weather. We add hot water in Winter to the cream because it would take too long to churn if it was cold.
    There is a brass ventilator at the side of the churn. When we begin to churn we press it in and out and it is by this means the air comes
