    Then she takes out the butter with two spades and she pulls out a cork in the side of the churn that lets out the buttermilk into a can which she holds under the little tap. When she is ready to make the butter she washes it well by pouring spring water over it
    Then she makes some of the butter into pounds after putting salt on it and the rest into a bowl for the house. Then she washes the churn and spades and leaves them outside the door to dry in the fresh air.
