  1. Until recently butter was made by the farmers of Dooncaha and Tarmons. Now, with the exception of two families who still make butter, all milk is sent to the creamery.
    The churning day was one of the busiest days of the week. Sometimes in summer it was hard work as the butter was slow to gather and sometimes the farmer's wife had to get up before sun-rise to do the churning.
    Small farmers were "joined in butter". They had not enough of their own to fill a firkin which usually contained 56 lbs and so they joined up to fill the firkin which was sold in Cork.
    Butter markets were then established in Listowel
