  1. Sawans
    is a favourite dish in Glenswilly during the winter months. When oats are threshed and corn is sent to the mill to be made into meal, meal seeds are got from the miller. These seeds together with a quantity of meal are steeped for two nights in that water until it has become sour.
    This is straned through a muslin cloth into a basin, which is left for a day and night.
    Next day the water which has risen to the top is poured off and the sediment is put into an iron pot and boiled slowly.
    While boiling it is constantly stirred to prevent burning.
    It is poured into a dish and eaten with milk like porridge.
    It is excellent for delicate people or for those who suffer from stomach trouble.
