- (continued from previous page)longer in Winter.The churning is always done by hand and the churn dash is always given a rolling motion from side to side. The people know when the butter is made when the churn gets heavier, also, they can hear it beating off the side. Cold water is often poured in during the making of the butter. It is said, then that the butter will churn quicker.The following is the way in which the butter is lifted out. It is first lifted out with the two skimmers and placed on to cool. Cold water is then poured over it to wash it. After the water is thrown off the pickle is then put on it. The pickle is then mixed well into the butter, then it is ready for use.The following story is connected with churning. It happened Mrs Meagher's aunt who was living a few miles outside the town of Nenagh. It happened that this woman had a churn, and a neighbour came to ask for the loan of the churn and the woman gave it. She got the churn(continues on next page)
