    The cream must be left for at least three days to ripen before it is churned. The butter may be made once a week in Winter but in Summer it must be churned twice or three times a week because the cream would get sour.
    The buttermilk is used as a drink, for baking, and it is sometimes given to cattle as medicine. It is also used with bran as a poultice and for a sore leg.
    Beliefs: Anyone that comes to the house while butter is making they are supposed to take the butter away with them.
    If a person wants to take their neighbour's butter they must go to the field where their neighbour's cows are grazing and bury a half dozen of eggs and a saucepan. They then go to a well and throw a rusty nail into it and then draw a white sheet through the water. They then cry out at the top of their voice: "I cry all. I cry all." Then they go back to the field and dig up the saucepan and milk the cows into it. They put the milk they got from their neighbour's cows into their own.
