    Father covers them with straw, then he puts clay on top of the straw.
    The best crop of potatoes that grows in our farm are Kerr Pinks.
    Potatoes were often used as starch.
    This was made by rubbing the potatoes on a grater, then the potato was put into water, and the starch settled at the end in one hard lump.

  2. Recipe for Starch from Potatoes
    Get some potatoes and scrape them into a basin. Pour a cup of cold water on them, and leave them there for an hour. Pour off that water, then pour a cup of boiling water on them, keep stirring until thick. Then you have fine starch.
