    Making of boxty
    Wash and peel the largest potatoes about the full of a large can.
    Then remove the skins with a knife and grate the remainder into a large vessel with a grater. Boil an equal quantity of potatoes and when boiled remove skins and mash finely.
    Wash a liner bag and put the grated (boxly) potatoes unit it and squeeze and all the water. Then mix the mashed potatoes with this mixture and when well kneaded add a little flour to help it is stick next it is made into small dumplings and placed in a pot of boiling water with butter and some sugar, or sliced and fried with dripping.
    Another portion of boxty is made in the following manner.
    Peel potatoes as before and grate
    Then remove a little of the water
    Take some sweet milk in a bowl add the grated potatoes and a
