  1. The bread was made locally of wheat, corn, and oats, which were ground by grindstones or querns.
    There were grindstones in this district they were derlict[?] for over twenty years.
    The different kinds of bread were boxty bread, oaten cake, potato cake. There were two kinds of oaten bread made a pan cake and a griddle cake. Milk or water was used when kneading the bread.
    Sometimes a griddle was not use they put the hard cake beside the fire with two nods of turf an iron stander to support it bread was made every during the[?] week.
