- Dash churns are scarce in this district. They are shaped like a barrel with hoops keeping the staves together.
In summer cold water is put through the cream in the churn and hot water in winter. Spring is the best time of the year for churning because it is not too hot or too cold.
About four gallons of cream that is churned at a time. The churning is made by beating the milk with the churndash. All the butter comes to the top of the milk when the churning is finished.- Collector

- The dash churns are very scare in this district. It is easier to make a churning with a barrel churn. Before the churning is made the churn is cleaned. If the milk is not thick enough to put into the churn it is left near the fire for a few hours.(continues on next page)
