    It was then blendid thoroughly. The pan was then cleaned. A few coals were taken and left one side of the hearth. The pan was then left on the coals to warm. When it was warm it was greased with a piece of bacon or some butter. Then the slim was put on the pan and it spreads over the pan itself. When there is a crust on it it is turned over by means of a knife. When there was a crust on the other side it was taken up. While it was warm some butter was put on it, and a very satisfactory meal it is.
    Here is the way potatoe cake is made.
    Some boiled potatoes were got and peeled and put on a dish. Then a porringer was got and the potatoes were bruised one by one with the bottom of the porringer. When they are sufficiently fine some salt is put in and they are mixed. Then it was wet with buttermilk. It was then put on a bread board and some flour was put on it. It was then flattened out and made into pancakes. The side of it was cut around about to make it round. The some flour was rubbed into the poatoe cake to make it firm.Then the cake was left on one side and some flour was shook on it. Then the rest o the cakes are put on top of this one.
    The pan is got and it is washed. There are a few coals taken out of the fire and they are left one side of the hearth. The pan is put on the fire and it is left there to heat up. Then the potatoe cake is put on the pan. It is watched until it is baked, then it is lifted. When there is a brown crust on the bottom it is turned over by means of a knife. It is watched
