  2. Potatoes were often used instead of starch. The potatoes are grated and the water that is left over when the grated potatoes are wrung in a cloth is allowed to settle at the bottom of a vessel. A kind of starch forms on the bottom of the vessel. The younger the potatoes the more starch they will yield.
