  2. The potato crop forms the principal food of the people. It is not used as extensively now as heretofore as daily food that is mainly due to the famine of 1847. The condition of soil and climate in Ireland made it possible to grow potatoes in every county. It is used as food for people and animals. February or March is considered sowing time. Great care must be taken of it until it is ripe. October is the time for digging. The blight does considerable damage but to prevent further destruction they are sprayed with a mixture of blue stone and washing soda.
